FILLING
2 eggs, beaten
1 c. dark corn syrup
2 c. pecans
1 c. sugar
2 T melted butter
1 t vanilla
1/8 t salt
1 t flour
PIE CRUST
2 1/4 c. flour
1 t salt
3/4 c + 2 T shortening (Crisco)
5 T cold water
FILLING
Combine.
Bake 9'' crust at 400 deg for 5 minutes.
Pour in pie filling into crust, bake at 400 deg. for 15 minutes, then reduce to 350 deg for 30-35 minutes
* high altitude: follow the above recipe
PIE CRUST
Mix flour and salt.
Cut 2/3 shortening in (cornmeal) (* note: using two knives, slice up the shortening in the flour/salt until it looks like cornmeal)
Cut 1/3 shortening in (large peas)
Add water 1 T at a time.
Form ball with dough.
Roll out
