• 1 lb chuck
  • 1 1/2 cup pecorino romano cheese (locatelli is best)
  • 1 1/4 cup bread crumbs
  • 3 eggs (whipped a tad)
  • 3-4 TB minced garlic
  • 1/2 cup fresh parsley (flat leaf)
  • 1/4 cup fresh basil
  • salt
  • 1 small spanish onion
  • 1/4 cup milk
Preheat oven to 350deg F.

Chop up the herbs, put in a bowl with the chuck/cheese/crumbs/eggs.

In a blender, liquefy the spanish onion and the milk. Pour it into the bowl with the rest. Mix (by hand), then roll into golf balls and bake them on a cookie sheet greased with lots of olive oil at 350 for about 35 minutes.
