• 4 med-large potatoes
  • 1/2 stick butter
  • 1/2 cup cream cheese
  • 4 TB butter
  • 1 med onion, diced
  • 1 clove garlic, minced
  • 1 lb ground beef
  • 1/4 cup water
  • 1 yellow bell pepper, chopped
  • 1 stick asparagus, chopped
  • salt
  • oregano
  • marjoram
  • paprika
  • parsley
  • cheddar cheese
MAKE: mashed potatoes (Boil potatoes til soft, mash with butter and cream cheese)

Sautee onion and minced garlic until onion is clear/ a bit caramelized. Throw in beef and brown, add 1/4 c water and yellow bell pepper and asparagus as beef is browning. Season with salt, oregano, marjoram, paprika, parsley (all to taste). Take off heat once done.

In 8x13 casserole dish, spread out beef mix. Then spread mashed potatoes on top. Make cool patterns in the potato with something like a fork because that is cool. Bake at 400 degrees for 30 minutes, or for 20 minutes and broil for a few minutes afterwards to brown the top of the potatoes. Take out of the oven and sprinkle cheddar cheese across the top immediately so it melts.
