• 2 cups all-purpose flour
  • 1 egg
  • 1 teaspoon salt
  • 1 tablespoon melted butter
  • 3/4 cup cold/ice water
  • Stick butter/margarine
  • Sweetened, condensed milk
  • Sugar
  • Canola cooking oil
Pour your flour into a mound and make a hole/depression in the middle. Put in the egg, salt, melted butter, and 1/2 cup of the cold/ice water into it and knead with your hands until it clumps together somewhat.
Add 1/4 cup cold/ice water. Knead until sticky and gooey.

Separate the dough into balls that can comfortably fit in the palm of your hand (about the size of a duck's egg). Coat each ball lightly with cooking oil and place in another bowl. Let sit for a few minutes.

On your flat surface, pour a little bit of oil and spread it. Then, take the balls of dough one at a time and spread them out with your hands, like a tortilla. It should be about as thin or thinner than a tortilla as well. If there is too little oil, the dough will be very sticky. If there is too much, the dough will start coming apart.

Put a tablespoon of butter on your frying pan and turn the heat on high. When the butter is mostly melted, put your roti dough on it and cook it like a pancake. Flip it over to cook the other side. It should be pale brown with darker brown parts. Put on the first plate when finished.
Repeat until all your dough balls have been turned into cooked roti.

Flake the roti by placing one in front of you, putting your hands on either side, and bringing them in as though you're clapping. Rotate and repeat one or two more times.

Taking your condensed milk (with holes in it), drizzle it on the roti evenly, about 2-3 tablespoons of condensed milk per roti. Don't spread it.
Sprinkle sugar on top, only enough to lightly cover the condensed milk but not enough to have hills of it.
Fold the roti in half and roll it up. Repeat until finished. Serve.

ALTERNATIVES TO ROLLED ROTI

Slice the roti up into 1-2 inch strips and place in a bowl. Drizzle with condensed milk and serve with a side of sugar and some forks.

BANANA ROTI

Slice a banana into thin pieces and place on an uncooked roti. Fold the roti over on top and cook in the frying pan. When finished, cut it up and serve with drizzled condensed milk or chocolate on top. Leave off the condensed milk or chocolate if you just want the banana.

Some might mix the banana directly into the dough, but this is not how I've seen it done in Thailand.
